Get ready. These are both non-vegan approved AND office-approved!
Moist, fudge-y, sweet, and mega-addictive, these Banana Brownie Muffin Tops are the perfect hybrid of a fudge brownie, moist muffin, and fluffy donut. All while being refined sugar-free, oil-free, and (if using oat flour or another GF sub) gluten-free!
Are you ready to try them out for yourself? The full recipe can be found below!
3 large bananas
1 tbsp ground flaxseed
1/3 cup cocoa powder
1/4 cup stevia
1 tsp vanilla
1 tsp baking powder
1/4 tsp baking soda
3/4 cup flour of choice
Optional: Handful of chocolate chips
Preheat the oven to 375 and lightly grease a muffin tin. In a high-speed blender or food processor, blend together the bananas, flaxseed, cocoa, stevia, vanilla, baking powder, and baking soda until smooth. Add in the flour and pulse to combine. If using, stir in the chocolate chips until evenly distributed. Spoon the batter into the muffin tin, filling each around 2/3 of the way full. Bake for 15-20 mins until firm to the touch and a toothpick comes out clean.
