It's National Ice Cream Day! And in honour of that, I thought I'd share one of my favourite recipes. This copycat Cherry Garcia is seriously mind-blowing. In addition to being completely vegan, it's also refined sugar-free, high in protein, and made with affordable ingredients.
Ingredients 4 frozen bananas 1 tsp vanilla 1/4 cup non-dairy milk of choice 1 scoop vanilla protein powder (I use Kaizen Vegan Vanilla Bean) 1 handful of frozen cherries 1 handful chopped vegan chocolate Method In a blender or high-speed food processor, blend together the frozen bananas, vanilla, non-dairy milk, and protein until smooth and creamy. Add in the frozen cherries and chocolate and pulse until evenly distributed, but there are still large chunks remaining. Either serve immediately for a soft-serve consistency, or pour into a container and freeze for a minimum of 2 hours for a firmer consistency. Enjoy, sunbeams!
