Hello sunbeams! Today's recipe is an exciting one. Not only is it for these super vibrant, fluffy matcha muffins, it's also my first official recipe with Yoso since joining their brand family! If you've followed me for a while, you know I love my coconut yogurt, and Yoso is my absolute favourite. Whether it be for a garnish on top of a smoothie bowl, a base of a parfait, adding creaminess to overnight oats, or used in baking to make things oh-so-moist and delicious, so having the opportunity to be a part of the Yoso brand family is a dream come true for me. They're also a Canadian company, and any time I can advocate for an amazing product that's so close to home, I'm so happy to do so!
As for today's recipe, I used their unsweetened coconut yogurt in the matcha muffins and as a base for the drizzle on top. These muffins are as bright in flavour as they are in colour and are a perfect breakfast, snack, or treat coming in to these summer months. Check out the full recipe below!
2 cups flour of choice (all-purpose gives the best colour payoff!)
1 1/2 tbsp matcha powder
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup stevia
1 tsp vanilla
2/3 cup unsweetened coconut yogurt (I use Yoso!)
1 cup water or almond milk
2 tbsp lemon juice
Zest of one lemon
Preheat the oven to 375. In a large bowl, combine flour, matcha, baking powder, baking soda, salt, and stevia and stir until evenly distributed. In a smaller bowl, combine the vanilla, coconut yogurt, water or almond milk, lemon juice, and lemon zest until smooth and creamy. Add the wet mixture into the dry and stir until just combined, careful not to over-mix. Drop by heaping spoonful into a liner or greased cupcake tin and bake for 18-20 mins until a toothpick comes out clean.
