1 cup softened dates
3/4 cup large flake oats
1/4 cup peanuts (or other nut of choice)
1 tsp vanilla
Dash of salt
1 cup Yoso unsweetened coconut yogurt
1 scoop Kaizen vegan protein* (either Vanilla Bean or Chocolate, depending on desired flavour)
Toppings and additions of choice
To make the base, add the dates, oats, peanuts, vanilla, and salt to a high-speed blender or food processor and pulse until a crumbly mixture forms. Press the mixture into the bottoms of jars or glasses. Now, prepare your cheezcake filling. Combine the yogurt and protein in a small bowl and stir until smooth. Top each jar with your cheezcake filling and whatever else your heart desires. For mine, I topped my vanilla cheezcake with strawberries and my chocolate with peanuts and a chocolate peanut butter drizzle. And there you have it! Quick, easy, portable, high-protein, and absolutely delicious. Either enjoy right away or keep in the fridge for up to 3 days.
*ALSO, for a sweet discount on Kaizen protein, you can use the code VEGANBEAN when you shop on their website here. If you've never checked out their products before, I super recommend it. They have a huge variety of proteins and supplements (many of them plant-based and vegan-friendly!) and they're Canada-made :) Plus, they're really lovely, supportive people!
