1 can chickpeas (drained and rinsed)
1/3 cup coconut sugar
1 1/2 tbsp powdered peanut butter or 2 tbsp regular peanut butter
1 tsp baking soda
2 tsp vanilla
1/4 cup water
1/2 cup oat flour
1/4 cup coconut flour
1/2 cup softened dates (soak in warm water for 30mins to an hour beforehand)
Blend the chickpeas, sugar, peanut butter, baking soda, vanilla, salt, and water until smooth. Add flours and blend again until a dough forms. Stir in the chocolate chips. Place the dates, salt, and 1/4 cup of the soaking water into a blender and blend until smooth. Spread the dough into a lined pan and swirl the caramel on the top, then bake at 375 for 25-30 minutes.
